CSA Week 21 {Goodbye Summer CSA}

I picked up my final CSA box last night *sob*.

But turn that frown upside down because that just means that the Fall/Winter CSA is about to begin! In a couple weeks that is. This will be my first Winter CSA so I’m curious what I can expect. Lots of root veg I suspect (my fav!).

I bought an extra pack of farm eggs on my last pick up day, and patiently await the next box. I think I have enough CSA bounty to last me two weeks anyways. I have LOTS of stuff piling up. Lots of pumpkins and butternut squashes, and those last forever. And I have started roasting and pureeing some pumpkins to store. A lot of that will be transformed into a pumpkin pie on Thanksgiving (its this Monday here in Canada).

Its cool again today and pretty dark and miserable looking outside, so I think its the perfect kind of day for soup! Butternut squash soup anyone?

Check out In Her Chucks awesome CSA party ”Whats in the Box 46” for an awesome round-up of CSA boxes and what people are cooking with their veggies. Great resource for inspiration!
